Since you have Windows 7 Professional, you have the ability to run the Flight Simulator in XP Mode. It is worth a try before going back to XP. Learn how to use XP mode here – http://windows.microsoft.com/en-us/windows7/products/features/windows-xp-mode

If you still wish to go back to XP, this will tell you how to uninstall Windows 7 – http://support.microsoft.com/kb/971762 . After uninstalling, you can pop in the XP disc and follow the installation directions.
